Sometimes, you just want a cookie.

I love trying new recipes. Breakfast, Lunch, Dinner, Dessert – I love cooking and trying new things. It’s one of the ways I use my creative juices and choose to relax on the weekend.

I especially love baking because with baking, it’s so easy to share the results with others! I love making muffins, cookies, macaroons, sweet potato bread and love even more to share it with others.

Recently, I bought Tomy (my husband) some Cashew Butter as a surprise gift because he loves cashews and has been wanting to try cashew butter for a long time. So what did we use it for? Well I made Sweet Potato Pancakes and he put some yummy cashew butter and raw honey on it and let me tell you, it was amazing. However, I also was just craving cookies that week and have never tried Almond Butter or Cashew Butter cookies, so I made some and then shared it with Tomy and the mothers’ in my life for Mother’s day!

See, ever since Tomy and I started eating more of a Paleo life style, I’ve tried to make healthier treats whenever I bake such as the Sweet Potato Pancakes, Macaroons and now these Cashew Butter cookies because let’s be real, sometimes you just want a cookie. Often we feel like once we start eating “healthy” we can’t have treats like these. However, I’m here to say that concept is gone! Of course, just because it’s healthier doesn’t mean you can eat 10 of them (well, sometimes :). So make them, feel no guilt, and enjoy them in moderation 🙂 Enjoy the food you eat and the life you have. Be creative with the foods you make and enjoy the freedom you have in eating. Eating well is not about restrictions, it’s about empowerment, choice, and freedom. So go ahead friends, make that cookie you’ve been wanting.

See the recipe below. Be creative with it. You can add whatever extras you want – raisins, chocolate chips, coconut flakes etc. I used raisins, mixed nuts, coconut flakes, and dates 🙂

Paleo Cashew Butter Cookies

Ingredients

  • 1/2 cup cashew butter (Artisana is the brand I used)
  • 1/4 cup dried cranberries (or raisins)
  • 1/4 cup chopped almonds (or Macademias, walnuts, etc.)
  • 1 tablespoon coconut oil
  • 1 egg
  •  2 tablespoons pitted, chopped dates
  •  1 tablespoon honey (raw honey taste the best and is the best for you)

Directions

  1. Preheat oven to 350 degrees (175 degrees C).
  2. Mix together cashew butter, dried cranberries, almonds, coconut oil, egg, dates and honey in a bowl until thoroughly incorporate. Place spoonfuls of mixture into a nonstick backing sheet.
  3. Bake in preheated oven until cookies smell toasted, about 12 minutes. Allow to cool and harden.
