Paleo Banana Bread

I love Banana Bread. Always have and always will. There is just something about the taste, texture, and smell that always draws me in. As a kid, I used to enjoy it frequently but now since I’ve been eating less white flour, I just don’t have it often. Until, my wonderful friend Tarasa shared this recipe with me. She actually shared this recipe months ago and even shared a piece with me when she made the banana bread. However, last week I had a craving for it again out of no where and remembered this delicious, paleo banana bread recipe. So, yesterday I made it and even added some dark chocolate chips to it! Absolutely delicious.

Paleo Banana Bread Muffins

Ingredients

  1. 4 bananas, mashed with a fork (the more ripe, the better)
  2. 4 eggs
  3. 1/2 cup almond butter
  4. 2 tbsp coconut oil, melted
  5. 1 tsp vanilla
  6. 1/2 cup coconut flour
  7. 2 tsp cinnamon
  8. 1/2 tsp nutmeg
  9. 1 tsp baking powder
  10. 1 tsp baking soda
  11. 1/4 tsp salt
  12. 2 tbsp honey (I only had maple syrup so I used this, but if the bananas are really ripe, you don’t need much of this)
  13. And whatever else you would like (I added chocolate chips, you can add nuts, coconut flakes, etc)

Instructions

  1. Preheat oven to 350 degrees F. Line a muffin tin with cups. In a large bowl, add bananas, eggs, almond butter, coconut oil, and vanilla. Using a hand blender, blend to combine.
  2. Add in the coconut flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Blend into the wet mixture, scraping down the sides with a spatula. Distribute the batter evenly into the lined muffin tins, filling each about two-thirds of the way full.
  3. Bake for 20-25 minutes, until a toothpick comes out clean. Serve warm or store in the refrigerator in a resealable bag.
