Paleo Bread Pudding by From the Ground Up

If there is one recipe you must try, it is this one. Not only is this Paleo Bread Pudding more delicious than regular Bread Pudding (at least in my opinion), it’s made by one of the most awesome people and greatest Pastry Cooks I know: Vickie Clarke.

Vickie Clarke is the blogger behind From the Ground Up, a blog focused on creating dishes and treats that aren’t only delicious in nature, but are Paleo, good for you, and downright yummy. Vickie is a master in the kitchen when it comes to pastries (at least in my opinion) and always creates amazing treats that leave your mouth watering both when you taste it and see her pictures from work on Facebook.

Vickie comes alive when she is in the kitchen and expresses her artistic nature through creating delightful treats. Vickie is from the Cayman Islands and currently works in a hotel as one of the Pastry Cooks, where she has learned how to create beauty from scratch ever since she started in Pastry three years ago.

How From the Ground Up Got Started

From the Ground Up came to be after Vickie and I were hanging out one day, talking about dreams, career, and eventually blogging. We started to talk about Made Well  and then eventually shifted over to talking about Vickie’s travel blog she used to document her travel experience in South Korea. I asked her if she would continue with that blog and she said only when she goes on her big travel adventures.

We then got to talking about her cooking, baking and vision for herself in the culinary vocation in the future. Having tasted many of her delightful treats, I told her that since she likes blogging, cooking and Paleo, she should start a Paleo Treats blog! With no hesitation, Vickie jumped on the idea and wanted to do it right away.

I then asked her “If you could name your blog anything in the world, what would you name it?” She instantly (I kid you not) said From the Ground Up and when she said that, I knew that not only was it the perfect name for the blog, but it described her experience in the culinary field completely.

She then went on to explain that From the Ground Up signifies how she never went to an official Culinary School or had any official training, but started her career as a Pastry Cook From the Ground Up,  and that after three years of being a Pastry Cook, she’s learned so much and couldn’t love it more.

Well that night, Vickie and I wasted no time. We went to my house and set up her blog. We talked about various posts she could have as well and how we both always wanted to own/run a healthy bakery and cafe (which we still plan on doing some day!). Vickie eventually decided that she wanted this Paleo Bread Pudding to be her first recipe on her blog.

Now, Vickie’s blog is new so there is only this one recipe there, but there will be many more – I promise 🙂 So please be on the watch out for her posts – which I will be sure to let you know about!

Now, back to the bread pudding.

That first bite – the moment where everything changed 

When Vickie came over one night to make the bread pudding, the first thing I did was try the bread portion of the recipe she prepped in advance. And when I did, all I could do is close my eyes and say “Thank you Jesus” (seriously, I said that and meant it). The bread alone was absolutely delicious and tasted better than any old gourmet white bread out there. My mouth watered over the mere idea of how tasty the actual bread pudding would be when it was done.

After my moment of praising Jesus, Vickie went on to add the coconut milk, cranberries, roasted pineapple (that she roasted herself!) to the bread and put the mixture in the oven to bake. We then made Coconut Milk/Banana Ice cream to drizzle (or pour in abundance over, whatever you want to call it) over the pudding once it was done.

And then the moment came. The moment where we could finally test it. The moment where I knew Vickie was the real deal.

I smiled in anticipation like a little kid as I lifted the bread pudding and coconut milk piece of art to my mouth and then tasted it. What happened you may ask? Well, the sky was open and heaven came.

It was (and still is) the best bread pudding I’ve EVER tasted.

From that moment on, I knew without a doubt that Vickie had to not only share her recipes on her blog, but create her own bakery/cafe where she could share her creations in person with others. And we both still hold fast that From the Ground Up as a bakery/cafe will happen one day.

But until then, Vickie, myself and you both have work to do! So far, Vickie and I did our part on this first recipe – Vickie made it, I ate it and wrote about it, and now it’s your time to make it and share your thoughts on it!
